I completely agree with the benefits of mob and pair programming. The difficulty has always been trying to describe the benefits in a way that convinces project managers unaccustomed to such modern ways of working that we can still hit those arbitrary deadlines.
I’ve even worked with (not in) teams that mobbed 100% of the time. Zero issues from doing it, which proves that it is genuinely an effective tool regardless of the naysayers.
We work almost 100% collaboratively, I think there is a lot of growth to be had when you have to explain what you're thinking in a way that is clear and logical!
